Ingredients
5 tbsp olive oil
500g red onions, sliced
1 garlic clove, crushed
2tbsp chopped fresh mixed herbs such as thyme, parsley and basil
225g ready-made puff pastry
1 tbsp sun-dried tomato paste
ground black pepper
3 fillets anchovies chopped
thyme sprigs, to garnish
Method
1) heat the oil in a pan and add the onion and garlic, cook covered for 15-20 minutes, stirring occasionally, until soft browned, stir in the herbs
2) preheat the oven to 220°C gas7
3) divide the pastry into four equal pieces and roll out each one to a 15cm/6in round on a lightly floured surfave
4) flute the edges by crimpimg them with your fingers, prick all over with a fork, place the rounds on a baking sheets and chill them for 10 minutes
5) mix 15ml 1tbsp of the remaining olive oil with the sun-dried tomato paste and brush over the centres of the rounds, the bake for 4 minutes
6) remove from the oven and set to cool
7) spread the onion mixture over the pastry rounds and grind over plenty of pepper, drizzle over a little olive oil, scatter some chopped anchovies then bake for about 15 minutes.
